It really depends on what you're looking for.
From Hong Kong:
If you have just a few days, Singapore and cities in China would be good for shopping and some sightseeing. (Tickets to Singapore from Hong Kong are really cheap)
From Seoul:
Perhaps Japan or Jeju island (I haven't been there myself but I heard it's really beautiful)
If you have more time, I would recommend Southeast Asian countries. There's lots to do in Vietnam, it's amazing there. And Thailand is great too.
From Hong Kong, you can visit Singapore, there will be a Singapore Great Sale during May - July 07 thenafter you can enjoy the beauties of Malaysia, Thailand and Indonesia.
Bali and Manado in Indonesia are very beautiful then there are direct flight from Singapore for about 2-3 hours. But if you want to have daily trip you can reach Johor Malaysia in one hour by taxi and Batam Indonesia also in one hour by Ferry.
